CHONTADURO CEVICHE

2 cups of cooked chontaduro and
        diced Pejibayes
Vinaigrette:
½ cup red wine vinegar
¼ cup olive oil
3 lemons
1 Tbsp Worcestershire sauce
½ cup of ketchup
1 onion finely chopped
2 sprigs of chopped chives
        only white
        coriander to taste
        Salt to taste
        chili pepper to taste
Stir this vinaigrette with the chontaduros.
Rectify seasoning.
Garnish with chopped coriander on top
